This Week In My Kitchen: Soup!

Fall is in full sway, which means two things in my world: 
  • Grading, and
  • SOUP!
I live through the former, I live for the latter.  I have many fall foods that I love, but I could (and sometimes do) eat soup every day in the fall and winter.  Most recently, it's been aduki bean and butternut squash soup from Clean Food, autumn lentil soup from this cookbook that I've kept around ever since my first pregnancy, and pinto bean chicken chili.  Of course, there were other delicious foods in the mix as well.  Even when it gets crazy busy, I do my best to reserve time to cook at leisure on fall weekends.  

We also had "first Sunday brunch" again this past Sunday, and it's proving to be a wonderful time to connect.  I'm learning (slowly) not to make it too much work.

And you know what I plan to serve at first Sunday in November?  That's right--soup!  (with bread and salad and maybe apple crisp)

  1. It all looks amazing. I am jealous - basically the only soup I can get Hubby to eat is potato or chili. I love salty broth vegetable-y goodness! And Curry! I love curry in the fall. Green curry with shrimp and jasmine rice, and speaking of rice, rice pudding. What a great comfort food. Ah... I'm spiraling out of control.

    1. I am lucky that my husband will try/eat just about anything (even though he is a meat and potatoes guy at heart). The kids, though, they are a different story! I'm with you on curry in the fall!

    1. It was a recipe I got from taking Heather's Whole Food Kitchen workshop last fall! Really good, and simple. That's what I like about many of her recipes--not hugely complicated, but quite satisfying.

  3. Where did you find time to do anything but cook all that?! It looks great! Hmm, my favorite fall meal at the moment -- well, for years and years we didn't live in the USA during the fall, and now I have rediscovered APPLES. Crunchy juicy apples. Any meal with that is heaven right now.....But I have started dreaming of casseroles -- very retro of me, but I've not made any for ages...

    1. Love apples too! As for time...ummm...sadly, sometimes (way too often) I find time to cook through grading avoidance.

  4. I am a big soup fan too Erin, especially at this time of year. I will check out some of your recipe books because this all looks so good. I am fan of pumpkin/squash soup too especially when I make it with coconut milk for a lovely silky smooth texture...mmm...
